WALKING WITH THE DOG: On the property, in a small grove nearby, our four-legged friend and his truffle-hunting owner are waiting for us for an easy walk in search of black gold: truffles! Along the way, we will discover the secrets and virtues of this precious underground fungus, known for its unmistakable aroma and added value to many traditional local dishes. Not only will the truffle be the focus of our walk, but the dog guiding us will also be a discovery! How do we train it? Which breeds are most suitable? Does it enjoy searching for truffles with us? At the end, we’ll enjoy truffles on homemade tagliatelle at the farmhouse.

THE GHOST TOWN OF MARZANA AND THE CHESTNUT GROVES: A trek of about 10 km immersed in nature to discover abandoned and enchanting places. This loop crosses the border between Umbria and Tuscany, passing through a protected area (Natura 2000) that is wild and largely uninhabited, dominated by extensive chestnut groves with some trees centuries old, and overlooked by the ancient 14th-century tower of Marzana. There is an opportunity to visit the Oratory of San Crescentino in Morra, which houses a cycle of frescoes by Luca Signorelli, including a “Flagellation” and a “Crucifixion,” along with other works attributed to the school of the Cortonese artist.
Length: approximately 10 km
Elevation gain: +460 m
ANCIENT FRUITS: Not far from the property, there is an incredible place accessible by foot that will introduce us to tree archaeology. Isabella, the guardian of ancient fruit trees, will introduce you to fruits with absolutely incredible shapes, colors, and flavors! In this “improbable” garden, there are about 600 specimens of different species, including apple, pear, cherry, plum, fig, almond, medlar, and quince trees, in 150 different varieties found in various areas of central Italy and cultivated here to preserve the “mother” species. If you want to expand your knowledge, you can visit the Pinacoteca of Città di Castello, which displays works featuring paintings of fruits from the 16th and 17th centuries, with insights from Isabella, a scholar and author of texts related to the museum.
SMOKED VIN SANTO FROM THE HIGH TEVERE VALLEY: We open our cellar and vinsantaia for a journey into the production of Vin Santo—now a Slow Food presidium—according to the peasant tradition of the area. From the harvest to the smoking process that gives it its characteristic flavor, through natural fermentation to slow aging. After the visit to the agriturismo’s cellars, we will taste Vin Santo accompanied by classic Umbrian tozzetti.
